    A great foundation for fabulous cooking.

    Lynn Alley provides a wealth of information on: well, the topics listed in the books title. The book doesn't just toss out a few recipes, it provides history, context, and technique. If you are interested in expanding the variety that comes out of your kitchen, and you enjoy crafting your own sauces and spice combinations, this book is as essential as good cookware.
