Madhur Jaffrey's terrific little book makes good on all three representations in the title: preparation is quick and easy and the results are definitely Indian. This is not watered down Indian; the spice combinations are subtle and full-flavored. The recipes are written for readers accustomed to American cookbooks; i.e., the measurements are accurate and time directions are specific.
