Nothing You Wouldn't Have Thought of On Your Own
You'd be better off buying a 'classic' Louisiana cookbook and using your own judgement to lighten recipes. The book is set up with a regular recipe on the left hand page and a 'healthier' version on the right hand page. In most cases the difference consists of obvious substitutions - such as lean ham in place of bacon - and simple reductions in the amount of oil or butter used.
