I LOVE this book. I am familiar with Indian cooking through an Ayurvedic cookbook and when I returned from India, I was looking for something a little more traditional, and VEGAN, and found this. I love Anupy's common sense approach and her encouraging attitude and flexibility with her recipes and seeking out new and unfamiliar ingredients. I also love the fact that a lot of her recipes, once you assemble the Indian spices and typical ingredients, can be made with 2 cups of whatever beans you have around and have pre-cooked.
