This book has many delicious recipes, using a variety of foods (quinoa, rice, lentils, beans, etc). I love that the author includes pairing ideas to help you create a well-rounded meal. There is also the caloric information and delicious desserts!
More pictures are always a plus in a cookbook.
I think this book has useful recipes even if you are not vegan but just want to cook healthy
