Summer Pasta Soup
Parsley is a delightfully easy herb to grow. It is as comfortable providing a lacy backdrop to a colorful patchwork garden as perched on a sunny kitchen windowsill. The subtle, familiar taste of parsley works as a partner in recipes, linking and enhancing neighboring flavors.
4 chicken bouillon cubes
1/4 cup minced onion
1 teaspoon dried parsley
4 cups water
1/2 cup dried gemelli pasta (small twists)
2 cups fresh store-bought broccoli coleslaw
Add bouillon, onion, and parsley to water in a 3-quart saucepan over medium-high heat; bring to a boil. Reduce heat to low and add pasta. Cover, with lid slightly vented, and cook 10 minutes. Stir in coleslaw. Remove from heat, cover tightly with lid, and let stand 5 minutes. Vegetables will retain a firm texture.
