Carol Gelles, one of the best-known authorities on the subject, offers hundreds of appetizers, entrees, soups, salads, and more, proving that vegetarian cuisine is anything but boring. The flavor combinations are limitless, drawing on the ingredients and spices from every international cuisine. Discussions of vegetables, grains, beans, and soyfoods are interspersed throughout the recipes, making the book easy enough for beginners to follow. And every recipe is coded as lacto-vegetarian (some dairy products), ovo-vegetarian (some egg products), or vegan (made without dairy or meat products).

This book includes a myriad of tasty recipes organized by type. Most of the recipes are simple with shorter, easy to find lists of ingredients compared to other vegetarian cookbooks. This book would make a lovely gift, even for non-vegetarians.

I received this book as a gift and have loved it so much that I have since given copies to several friends. It makes a great bridal shower gift. The recipes are quite varied, often have variations, and are easy to follow. And delicious!

I absolutely love this cookbook. I've made many of the recipes and would make almost all of them again (and HAVE made many of them again). Try the Asparagus Dill Quiche, World's Best Whole Wheat Biscuits and Black Bean Polenta Pie for starters.

My paperback version of this wore out. Pages fell out or were illegible from use. This made my day.
