Overview

This new edition of 1,001 Low-Fat Vegetarian Recipes is completely revised to reflect current food trends and cooking preferences.

The introduction will adhere to American Heart Association guidelines and will include the new FDA nutritional guidelines, with comments on the importance of exercise as part of a total healthy lifestyle.

In general, recipes will be easier and faster to prepare with fewer ingredients and more concise cooking methods. Recipes that can be prepared in 30 minutes or less will be identified throughout the book with an “express veg” icon. The “super foods” that boast high nutritional, antioxidant, and phytochemical qualities will be emphasized in recipes—blueberries, kiwi, pomegranate juice, melons, citrus fruit, edamame, leafy dark greens, broccoli, butternut squash, carrots, beets, tomatoes, bell peppers, beans and legumes, nuts, flax and hemp seeds, whole grains, and soy and dairy products.

As in the previous edition, recipes will include every recipe category from appetizers through desserts, with more than 500 entrees, offering a rich choice of satisfying vegetarian meals. Each recipe will be labeled with an identifying icon for vegan, lacto-vegetarian, ovo-vegetarian, and lacto-ovo-vegetarian. Nutritional data and diabetic exchanges are included for each recipe.

My wife decided to be a vegetarian as a New Year's Resolution. She is a Vet. Tech. and works into the evenings sometimes. I bought this book to be able to start from scratch with tasty, healthy, nutritious vetarian recipes. The fact that it has more than 1000 recipies appealed to me over several on the shelf beside it. I like the way the book is organized into categories. The book is well written and the instructions will appeal to novices and seasoned chefs as well. I photo copy the page for the entree I am going to prepare and take it with me to the grocery store. The recipies are simple, yet sumptious. I keep the book in the kitchen at all times, which means it is subject to physical abuse. For this reason, my only complaint is that it is paperback. I would have preferred a hardcover. I still rate it 5 star overall!

This was my first vegetarian cookbook that I ever bought. Actually it was the first cookbook of ANY kind. The recipes are very straight-forward, the majority of the ingredients are easy to find, and 'most importantly' the food is terrific! This book has a HUGE variety of recipes with flavors from all over the world, and has them grouped into handy chapters-- entrees, pasta dishes, pizzas, bean dishes, grain dishes, low carb, side dishes, etc. I have had a lot of success with this book, which even my 'Where's the meat'-demanding family enjoys.

This is my go-to cookbook for any meal. I have made so many of the recipes and each one has been fantastic. A must-have cookbook!

I'm really enjoying this excellent array of healthy recipes. Although I'm not a Vegetarian I am really loving many of these choices as part of a healthy regimen. I recommend this selection.
