Most of the recipes in "150 Best Diabetes Desserts" are for treats you probably had before you were diagnosed with diabetes. And in that way, these recipes aren't exotic, wild or weird. They call for ingredients health-conscious cooks probably have on hand — things like wheat germ, unbleached flour and flaxseeds — and granulated brown sugar. Oh, my!... It's a good time to be a diabetic if you can follow a recipe.

Preface

This book of desserts is for people living with diabetes and for their families and friends — just about everyone! By 2010, 10% of the population of the United States and Canada will have diabetes, so it's a rare person who does not know someone with this disease.

The recipes selected for this book were not specifically developed for people with diabetes, but we have chosen ones that can be worked into most people's meal plans. Many are special-occasion treats, but some can fit in more often.

To help you include these recipes in your meals, each recipe has a breakdown of calorie, carbohydrate, fiber and other nutrients, plus America's Food Exchanges and Canada's Food Choices.

In the introduction, we look at

  • who has diabetes, and why we should be concerned about this disease;
  • food and nutrition recommendations for people with diabetes; and
  • "budgeting" for desserts: how you can plan to include these treats in your meals.

In addition, in case you don't wind up with the same number of cookies as we did when preparing a recipe, we've included a "cookie calculator" that allows you to recalculate a single serving.

Following the introduction, you will find a table of nutrient values for common dessert ingredients, as well as two worksheets, so you can figure out how to fit your own favorite desserts into your meal plan. Would you like to know the Exchanges or Choices for a serving of a favorite recipe? The worksheets on pages 18-29 will help you estimate them.

Throughout the book, you will find "Barb's nutrition notes" and other tips that will help you prepare and enjoy these recipes.

Whether you're controlling your diabetes through diet and exercise alone, or with the help of oral medication or insulin, I hope you'll enjoy the recipes in this book and find the tips helpful.
