I don't know of anyone that doesn't love a Panini and making one is actually quite simple. And, the best part? You don't have to have a Panini maker; you just need a griddle and a heavy object to press down with. Of course having a maker would certainly give you the grill marks and make the Panini more authentic. For the purpose of a review we are asked to test out three recipes. I love basil pesto in a Panini, therefore was on a hunt to find one using it. The one I decided to try first was Chicken Pesto Panini. I already had fresh pesto and, when checking the recipe provided in this book, it was exactly the same. The recipe calls for Italian rolls but I used ciabatta instead. The other ingredients were chicken breast, provolone cheese, spinach leaves, oil-packed sun-dried tomatoes, and slices of red onion. Delicious!! I was intrigued with the section on Leftovers Panini. Looking at the index I realized I can make a Panini out of almost any leftovers. So, with pot roast on hand I
shredded the meat and placed it on the bottom of a slice of sourdough bread. Top that with horseradish mayo, slices of red onion and crumbles of blue cheese and you've got yourself a great tasting Panini. The third recipe I tested was Cheesy Beanie Panini. Flour tortillas are filled with mashed pinto beans and shredded Monterey Jack cheese. Grill and then top with ranch dressing, lettuce, tomatoes, and salsa and you have a great lunch. Also, you now have a Panini rather than a burrito. I see some other recipes that I'll be trying and, from what I can see, my imagination can wander. As well, I'll be investing in a Panini maker because they are a hit in our home. The recipes are simple and most of the ingredients can be found in any kitchen pantry. If not, the nearby grocery store sure does. If you love Panini you can't afford to be without 200 Best Panini Recipes.

Preface

WHEN I WAS ASKED to write 200 Best Panini Recipes, my initial reaction was, You better know I will! Then I thought, Are there really 200 panini recipes?

But just as my mom was, I am the master of sandwiches. I have been told I make the best sandwiches, and I think this is because I believe sandwich ingredients have zero limitation. And what is a panini but a pressed, grilled sandwich? When I looked at it that way, I knew I could create 200 plus.

The potential ingredient lineup for sandwiches are endless, as are the combinations of flavors, both traditional and unusual. And you can take almost any sandwich and turn it into a panini, with a bit oflandscaping. You know, to keep the ingredients from oozing out too much. Once you step outside of the panini "box," you'll find that there are a million irresistible possibilities.

In this book, I've included many of my favorite sandwiches, such as Turkey Panini with Cranberry Chutney and Sunflower Seeds (page 110), Beef and Brie Panini (page 127) and Shrimp Club Panini (page 80). I put my own spin on some traditional sandwich recipes, such as the classic Reuben Panini (page 135), the Monte Cristo Panini (page 143) and the Philly Chicken Panini (page 182). I figured out ways to reinvent other recipes I enjoy as delicious panini, as with the Chicken Caesar Panini (page 92), the Lobster Fontina Panini (page 84) and my signature sandwich, The Tiffany (page 166), which incorporates my favorite pizza toppings. I polled my friends and family to learn what flavor combinations they enjoy and turned those ingredients into panini, such as Marcia's Tuna and Swiss Panini (page 62) and the Open-Face Hawaiian Melt (page 218), my daughter's favorite treat. And I experimented to create brand-new flavor combinations that exceeded even my own expectations, such as Smashed White Bean, Avocado and Bacon Panini (page 158), Sardine and Balsamic Tomato Panini (page 64) and Mixed Berry and Mascarpone Panini with Toasted Almonds (page 227).

    Perfect Holiday Gift!

    This easy to read cookbook is a perfect companion for a panini press. Great gift idea to pair the 2 together. Tons of beautiful photographs throughout the book will inspire even the most novice and inexperienced "chefs". The Panini Dippers are a great appetizer to serve at a holiday cocktail party because they are the perfect finger food since they won't fall apart; the Mixed Berry and Mascarpone Panini with Toasted Almonds is a rich, decadent dessert to serve anytime, but especially when fresh berries are available. There's even a chapter dedicated to kids!

    Best Recipes for Family Dinners to Entertaining

    I'm not a great cook but I've made over a dozen recipes out of this book for dinner, bridal showers, and wine tastings for friends. I have received compliments from guests that are serious food coinsurers, pastry chefs and die hard eaters. This book is great and calls for ingredients that I have or can run to the market and find it. Any level of cook can find this book helpful. Chef Collins knows how to mix it up and what talent and creativity to do so with 200 recipes. This is a book that I will live by forever. No more boring, cold sandwiches for my family and friends!

    Great recipes

    Great pictures and very inspiring. They range from breakfast panini's like french toast panini to even dessert panini's. There's so many that I want to try. There final chapter has the condiment recipes like mayonaise combos, dressings and sauces. Well worth the money.

    The definitive collection of Panini recipes

    This is an excellent book for anyone who already has a panini maker or is looking to add this item to their culinary repetoire. This book is a great resource. Definitely something for EVERYONE!
