Cheese is a favorite food of many and one that graces dishes from Indian palak paneer to American grilled cheese, though it is rarely seen as the focal point of a cookbook. "Cheese makes everything better!" as the slogan goes, simplifying a long-known fact that cheese does, in fact, add flavor to dishes, can also be best on its own, and is probably one of the world's most versatile ingredients. Gayler (Pure Vegetarian) is a well-known British chef with years of experience preparing haute cuisine for demanding clientele. With this book, he doesn't stray far from high-end food but keeps the recipes simple for the novice chef; they are diverse in their preparation, taste, and ingredients. The introduction offers helpful, straightforward tips on cheese types, cheese storage, and the often confusing pairing of cheese with wine.
