Gayler is one of London's top chefs and the author of several other cookbooks, including Virtually Vegetarian, a collection of sophisticated vegetarian recipes. Though vegetables are once again his focus, the imaginative recipes in his latest book are not limited to vegetarian dishes. Some feature more exotic ingredients like purple potatoes or truffles, but the majority are for familiar, readily available vegetables prepared in easy but different ways: Gujerati-style Spinach with Lemon and Black Pepper, Charred Green Beans with Red Onion Sambal, Minted Shallot Tart.
