Description: This is the second edition of a textbook that covers all aspects of the basic nutrients and their purposes for advanced science and nutrition students. The previous edition was published in 1999.
Purpose: The book assumes that readers have completed courses in introductory nutrition, biochemistry and anatomy and physiology. It is meant for nutrition/dietetics majors or Master of Science students. The objectives are to build upon the basic foundation of nutrition that the students are assumed to already possess.
Audience: Since the book is written at a more advanced level, it is meant solely for higher level students with a solid background in nutrition. Both authors are PhDs and RDs. One has been a teaching professor at several universities and currently conducts nutrition-related research, and the other is currently a teaching professor at a university.
Features: Each chapter starts with a set of objectives as well as a list of bullet points that were covered in the previous chapter. The majority of the chapters include special feature sections. The nutrition and exercise chapter includes one on caffeine and athletic performance, giving a thorough overview of the current research on this topic. One of the authors is a fellow of the International Society of Sports Nutrition, which lends considerably to the depth of information in this chapter. All other chapters include summaries and multiple questions that help students retain the information. Multiple illustrations and tables grace each chapter. Although it is not the most colorful or appealing book, the information is solid and up to date.
Assessment: This is a solid textbook for nutrition majors and Master of Science students. Because it is advanced, this is not the best option for a basic nutrition class.
