My son has 8 food intolerances. He cannot eat gluten, dairy, beef, mushrooms, soy, peanuts, eggs, or apples. It has made cooking a nightmare. I ordered this book, figuring that like all the others, I would have to alter the recipes to fit his diet. Imagine my amazement as I went thru recipe after recipe that I didn't have to alter at all! All the recipes used pears instead of apples, but offered a apple alternative if you wanted it. Not all the recipes could be used, but an amazing amount could be (actually almost all of them). I would recommend this book for anyone with food allergies/intolerances, regardless of how few or many they have. My son and I have enjoyed every recipe that we have tried so far.
