Tilapia and Spinach Roll-ups with Shallot and White Wine Sauce

Serves 4; 3 ounces fish per serving

Mild-flavored tilapia, which blends so nicely with other foods, is complemented here with baby spinach leaves and a topping of crushed walnuts.

Ingredients
4 tilapia fillets (about 4 ounces each)
1/4 teaspoon salt
Pepper to taste
5 ounces fresh baby spinach leaves
1/2 cup shredded or grated Parmesan cheese
1 cup dry white wine (regular or nonalcoholic), plus more as needed
1/2 cup fat-free, low-sodium chicken broth or low-sodium
vegetable broth, plus more as needed
1 medium shallot, minced
2 tablespoons walnuts, crushed

To Prepare

Preheat the oven to 375°F.

Rinse the tilapia and pat dry with paper towels. Place the fish on a flat surface. Sprinkle the fish with the salt and pepper. Place the spinach on the fish. Sprinkle with the Parmesan. Starting at a short end, roll each fillet jelly-roll style. Secure each roll-up with a wooden toothpick. Place the fillets in a glass 13 x 9 x 2-inch baking dish.

Pour the wine and broth over the fish, using enough liquid to fill the dish to a depth of about 1/2 inch.

Sprinkle the shallot over the fish.

Bake, covered, for 30 minutes, or until the fish flakes easily when tested with a fork.

To serve, using a slotted pancake turner, transfer the roll-ups to plates. Sprinkle with the walnuts.

    After kissing so many times, I was happy. All of the sudden there was a knock on the trap door entrance. "Great. Who is it?" We both sprinted over to the trapdoor. "Hello?" I knew that voice too well. Vivian. "Help! I think they want to hurt us!" What? "Luke, open it!" I shouted. I don't care if she hated me. We were sisters. Luke unlocked the entrance and Vivian plus the boy she was hanging out with last night hopped down. I had a suspicion this was Jace, the guy Vivian had emailed. The guy who got us into this mess. Well, got Vivian into this mess. I was happy with what happened. Vivian had tears coming down, thick maskarra streaking down her face, leaving black dried rivers on her red cheeks. "Oh my gosh. Court, it was horrible." Vivan hugged me and broke into sobs. I looked at the guy, "Who are you and what happened?" I demanded. His face fell and he looked really scared, "I'm Jace, Vivian met this weird monster freak thing. It tried to kill Vivian, but she escaped just in time. It's sword was just an inch from her face. It's hard to keep her out of trouble." I nodded. Luke looked in between Vivian and me. "How do you know her?" He asked reluctantly. "Courtney and I are half sisters. Luke." Vivian spat, "Don't trust him Courtney, he's not good for anyone." I looked at Luke, and cautiously asked, "What is she talking about Luke?" Something was off here. Vivian never acted like this about ANY of her and her ex's past. But then again, she always dumps the guy. Maybe he dumped her. Whoa Courtney, be serious. "Well. . . We kind of used to date." Luke sheepishly said. Vivian didn't back down, "Yeah, kind of." She sarcastically added, "I lost my virginity to you. And look at where I am now." What? Jace akwardly looked around. But Luke and Vivian? How? Vivian was stuck up and mean. Luke was sweet, careless, nice. Impossible. The factors didn't add up. All of the sudden my world was black. ••• OMG. Vivian plus Luke? What happened to Courtey. Fainting like that is kind of weird. Spectacular! Hope you liked it. There's more in stock. . .

    Fantastic book!!!

    We were looking for a sensible eating plan and this is it!! Great meal plans, and I can't say enough about the recipes! Everything we've had so far has been delicious! A must buy for anyone looking for guidance on eating right!
