Overview

With special attention to the most common forms of arthritis--osteoporosis, rheumatoid arthritis and gout--The Arthritis Healthy Exchanges Cookbook offers sound advice and recipes that will help anyone suffering from arthritis to get the maximum benefits from a nutritional program. Because there is no one diet prescription that is right for every person with arthritis, the most important aspect of the Healthy Exchanges approach is to achieve a well-balanced diet that encourages variety and moderation. The Healthy Exchanges program recognizes that certain kinds of foods (and food allergies in some people) may heighten symptoms and that the inclusion of appropriate levels of vitamins and minerals in the diet will promote overall health, so all the recipes are designed with these factors in mind. From tasty appetizers to hearty main dishes to delicious desserts, this collection carries all the hallmarks of JoAnna Lund’s recipes that her fans have come to expect: quick and easy to prepare using easy-to-find ingredients, guaranteed to be low in fat, calories and cholesterol and high in taste. Along with recommendations for regular exercise and other reasonable lifestyle changes, the Healthy Exchanges program can help anyone take an active and positive role in their own well-being.

"...contains easy-to-prepare, delicious recipes that include vitamins and nutrients that can improve resistance to the symptoms and pains of arthritis."

Editorial Reviews

Library Journal
Lund, well known for books like The Diabetic's Healthy Exchanges Cookbook (GK Hall, 1997) as well as her TV show Help Yourself with JoAnna Lund, has now adapted her recipes to the arthritic. Being overweight often leads to arthritis, and Lund, overweight herself, found she could alleviate some of her arthritic problems with changes in diet. Her recipes are basically intended to keep down fat, calories, and cholesterol, and she follows the guidelines of the American Dietetic Association. She also notes which recipes freeze well. Included are soups, vegetables, salads, main dishes, desserts, and miscellaneous items, such as dressings, biscuits, and muffins. Although she gives the food exchanges necessary for a diabetic, some will not agree with her use of NutrasweetTM and Saccharine TM as sweetening agents. Well written and offering good, sound advice, this book nevertheless appears to be aimed more at the diabetic than the arthritic, though most people would benefit from the information. Recommended where there is demand for her books. (Index not seen.)Loraine F. Sweetland, IPS Information Problem Solvers, Crossville, TN
