2 packages (10 ounces each) frozen chopped spinach
2 tablespoons butter
2 tablespoons flour
1/ 2 cup evaporated milk
8 ounces pepper jack cheese
1/ 2 teaspoon cracked pepper
1/ 2 teaspoon granulated garlic
1 teaspoon salt
1/ 2 teaspoon Worcestershire sauce
1 can (8 ounces) artichoke hearts
Grated Parmesan cheese
Crackers, of choice
Preheat oven 350 degrees. Cook spinach according to package directions and reserve 1. 2 cup cooking liquid.
In a large saucepan, melt butter and add flour, stirring constantly. Add milk and reserved liquid and cook until it thickens. Add pepper jack cheese, pepper, garlic, salt, and Worcestershire sauce, stirring to combine. Fold in spinach and artichoke hearts.
Place in a 9 x 9-inch buttered casserole dish, sprinkle with Parmesan cheese and bake until it bubbles, approximately 30-45 minutes. Serve with crackers. Variation: If you would like to offer dip as individual servings, bake as directed and then scoop into 8-10 ramekins or small decorative bowls and serve.
