Maine pastry chef Klivans tells a little white lie in her title. The component "parts" of some of her 130 desserts are frozen in advance. Nonetheless, she offers make-at-home versions of professionally created recipes, including chocolate acorns, sticky toffee pudding with warm toffee sauce and cream, and pumpkin-pine nut cake. Klivans starts with excellent tips about the whys and hows of techniques, equipment, and the mechanics of freezing, and her advice is good--with the single exception that the fancier desserts call for lengthy preparations.
