Beer Batter Pancakes

2 to 3 servings

2 1/4 cups flour

3 tablespoons sugar

1/2 teaspoon salt

6 tablespoons melted butter (cooled to room temperature)

2 eggs, lightly beaten

1 teaspoon vanilla

2 teaspoons freshly grated orange rind

1 tablespoon orange juice

12 oz. pale ale

Combine flour, sugar, and salt. Add remaining ingredients and beat until smooth. Let batter sit until it cools to room temperature. Stir gently before pouring onto griddle.
