The 15th title in this Cook's Illustratedseries presents 300 recipes from around the world, including French Onion Soup, Parmesan Risotto, Moussaka, and other such classics. As in the magazine, the emphasis is on the testing and retesting process behind each "best recipe," and this text-heavy approach presents only a handful of recipes from many of the cuisines represented here: Africa and the Middle East, for example, are covered in 27 pages, with only 15 basic recipes (and a handful of accompaniments) for these two big regions. Many of these familiar dishes can easily be found in big general cookbooks such as The Gourmet Cookbookand The All New All Purpose Joy of Cooking; for a truly international cookbook, Mark Bittman's The Best Recipes in the World, with a diverse selection of more than 1000 recipes, is a better choice.
