Lebanese Spiced Flat Bread

Zataar (or zatar), a Middle Eastern spice mixture, covers this crisp bread with enough zesty flavor to make it a fine hors doeuvre all by itself. No dip or spread is needed.

Yield- 2 (9-by-12-incb) flat breads, 8 servings each

Zataar Topping

2 medium onions
2 teaspoons dried thyme leaves
2 teaspoons dried oregano
1/2 teaspoon freshly ground black pepper

Dough

1 1/2 teaspoons dry yeast
1 3/4 cups bread flour
1/2 cup whole wheat flour
1/2 teaspoon salt
3/4 cup water
  1. Preheat the oven to 450 degrees. Roast the onions in their skins 45 minutes, Cool and chop into 1/4-inch dice. Mix the onions with the thyme, oregano, and pepper to make zataar. Leave the oven on.
  2. While the onion is roasting, add all ingredients for the dough in the order suggested by your bread machine manual and process on the dough cycle according to the manufacturer's directions.
  3. At the end of the dough cycle, remove the dough from the machine and divide in half. On a floured board with a floured rolling pin, roll each piece of dough into a 9-by-12-inch rectangle. Place each on a nonstick baking sheet and spread 1/2 of the zataar mixture over each.

I am unhappy with this book.

I purchased this as a gift for a friend who is diabetic. We have tried many recipes from this book and have had poor results with all of them. When we use the recipes from other sources we have no problems, but these always fall when we bake them. We have altered the recipes, but to no avail ... unless we add sugar but then what is the point?

    Breads for Health Nuts

Only when you make your own bread do you realize how much oil, salt, and sugar was required. However, with this book, no oil nor sugar was ever used and the recipes work!! I particularly enjoyed all the 'extra ingredients' Rosenberg incorporated into his recipes, such as whole wheat flour (almost in every recipe), wheat bran and germ, quinoa, buckwheat, oat, kale, ckickpea, and even sprouted wheat! If you bought the bread machine for a healthier life, this is the book you must have! PS. I hope to see flaxseeds in the recipes if there is ever going to be a revised edition. ^_^
