Editorial Reviews

Library Journal

Any busy cook appreciates dishes that can be prepared in advance, and the latest title from the Cook's Illustratedkitchen offers more than 300 make-ahead recipes. The editors chose both obvious candidates, dishes that "are made ahead by design," like dips and appetizer spreads, and recipes that required some tweaking or experimentation to be successfully prepared in advance, such as Cocktail Crab Cakes. Most of the recipes include variations, and there are also ratings of ingredients and equipment, numerous charts, color photographs, and step-by-step illustrations. For most collections.

    A Great Book!

I love to cook and this has been one of the best and most acurate book of recipes that I have ever purchased. I have made at least 6 recipes so far from this book and all have turned out A+. I'm looking forward to trying them all!

    Fantastic

I wish I had this book when I first got married. I've been cooking 20 years for my family, found this book, and learned many things from it despite my years in the kitchen. It's perfect for the new cook or someone who's missing out on the wisdom that older generation cooks would know, but aren't around to tell you. The Test Kitchen experimented with many versions of each recipe and made the mistakes so you don't have to. The book explains why certain versions of a recipe don't work so you know what not to do for recipes you already have. There are fantastic recommendations for the best storage containers, instant read thermometers, olive oil, etc. It's long on information, with classic recipes nested in between. A solid value for the curious cook.
