I searched for the Cook's Illustrated "Lemon Layer Cake" recipe (after I saw it on PBS) and it was on the cover of this book! Fantastic. I have made several of the recipes and they are flawless. They go into the science of cooking and why an ingredient is added. My only complaint: it is hard to read some of the fractions in the recipes (maybe I need a pair of readers in the kitchen). If you want to make something fabulous for guests, you can trust these folks. Read the recipe and follow the directions word-for-word and you will have guaranteed success.
