Soft Raisin Cookies

Makes about 9 dozen

2 cups raisins
1 cup boiling water
3/4 cup shortening
2 cups sugar
3 eggs
1 tsp. vanilla
4 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
1 cup chopped nuts/

1. Add boiling water to raisins. Cook 5 minutes. Set aside to cool.

2. Cream shortening and sugar. Add eggs and vanilla and beat well.

3. Sift together flour, baking powder, baking soda, salt, and spices. Add alternately with raisin liquid to creamed mixture. Stir in raisins and nuts.

4. Chill dough for several hours or overnight.

5. Drop by teaspoons onto greased cookie sheet. Bake at 350 degrees for about 12 minutes.

Amish Cookies

Makes 7 1/2 dozen

21/2 cups sugar
1 1/8 cups shortening
3 eggs
2/3 cup dark molasses
1 cup sour milk
6 1/2 cups flour
2 Tbsp. baking powder
3 Tbsp. cinnamon
2 Tbsp. soda
1 1/2 tsp. nutmeg
2 cups oatmeal
1 cup raisins
3/4 cup chopped peanuts or walnuts/

1. Cream sugar and shortening. Add eggs and beat well.

2. Add milk and molasses alternately with sifted dry ingredients.

3. Add oatmeal, raisins, and nuts. Mix with hands.

Bake at 350 degrees for 8-10 minutes.
