This is the fourth in the ``best of'' series, and like the recent Best of International Cooking, it stakes a broad claim that is hard to live up to. Teubner and Wolter continue to show a Central European bent, infusing the collection with a heavy dose of paprika and schnitzel. From this stronghold, they venture into French gratins and Italian noodles, then wander off with a few far-flung clichesChinese spring rolls, Yankee corn fritters. Within these borders, there is enough variety to include many enticing roasts and stews, casseroles, game such as saddle of wild boar, a large repertoire of composed salads, puddings and pancakes and frittersa tasty if generally too-hearty selection. Recipes are brief and clear, leaving plenty of room for every of the 400 of them to be illustrated by a color photograph. (July)
