Description: This book is a description of the basic chemistry, function, metabolism, and nutritional considerations of the macronutrients and essential vitamins and minerals, including their role in disease processes.
Purpose: The purpose is to cover human nutrition in a manner that includes the molecular, cellular, tissue, and whole body levels. It is intended as both a text and reference for students and professionals in the life sciences. These are worthy objectives, as few authors successfully integrate the various levels of nutrition or include macro and micronutrients in the same book. The author meets her objectives. The use of experts as contributors increases this book's usefulness as a reliable and topical reference book.
Audience: This book is intended for upper-level undergraduate students, graduate students, and professionals who have completed studies in organic chemistry, biochemistry, molecular biology, and physiology. It is written at an appropriate level. The chapters are written by recognized experts in the covered subjects and so are highly credible.
Features: The basic chemistry, functions, metabolism, and requirements of macronutrients, micronutrients, and energy are covered. The author includes discussions of the role of nutrients in chronic disease processes such as diabetes, atherosclerosis, and osteoporosis, as well as effects of deficiency and toxicity. An integrated view of nutrient metabolism in the fed and fasted state, starvation, and during exercise is also presented. The use of clinical correlations and nutrition insights to separate information from the main body of the text is an interesting and effective way of highlighting the relevance of the information presented to everyday life.
