    Ok but...

    The cuisines in the book are authentic and the cultural tidbits are enjoyable, but the book is organized by region and not course or ingredient. I would not recommend this book for someone looking for just an easy yet authentic reference for Brasilian cooking. A true connoiseur of ethnic cuisine will find it enjoyable but this is not the go-to book for a random meal if not already familiar with the basics.

    authentic portugese cuisine

    after sampling brazil`s varied fare during carnival `96 i wanted to attempt to reproduce it in my home country.(i`m a chef living in australia!).I was able to source most of the ingredients locally,found recipes easy to follow and the resaulting flavours authentic and delicious.I have been making moqueca for 6 years now.(I have my own version!).
