Unlike electric ice cream makers and pasta machines, the bread machine hasn't really enjoyed wholehearted acceptance in the culinary world. There are hordes of enthusiasts, no question about it, but many who consider themselves serious bakers look upon the machine with a skeptical eye. However, the newer generation of machines turns out excellent bread, and after being bombarded with know-how by this James Beard Award-winning writer, even the most reluctant may be inspired to give it a go. The book opens with an excellent orientation to both the machine and the basics of bread making. Step-by-step instructions are given for a few basic loaves. (Less helpful is a "what went wrong" section, which displays a firm grasp of the obvious.) The 300-plus recipes are so far-ranging it's hard to believe a bread exists that isn't included here. There are white breads and sourdoughs, all manner of whole wheat and grain breads and breads featuring nuts and dried fruits, cheese and savory flavorings. There are crusty ciabattas, a sturdy Irish Potato Brown Bread and a variety of challahs. Hensperger also includes dozens of sweet breads, including croissants, coffee cakes and traditional holiday confections. There are recipes for pizza and flatbreads, as well as selections from a variety of traditions, from Alsatian kugelhopf to Zuni Indian bread. She even offers instructions for using bread machines to make pasta, jams and chutneys. By the end, Hensperger (The Bread Bible, etc.) will have convinced readers that it's time to overcome any qualms and get to work. The bread machine is here to stay. (Aug.) Beth Hensperger, a New Jersey native who has lived in California since her teens, has been educating, writing, and demo-lecturing about the art of baking for over 30 years. In the last few years, she has shifted focus to countertop appliance-driven cookbooks that embrace adapting traditional and professional recipes for the home cook: the bread machine, the rice cooker, the microwave, and a four-volume compilation specifically for use with the electric slow cooker, stressing personal creativity in preparation and selection of ingredients. Hensperger is the author of over 22 cookbooks, including the best-selling Not Your Mother's Slow Cooker Cookbook series, which includes NYMSC Recipes for Entertaining, NYMSC Family Favorites, and NYMSC Recipes for Two, along with the blockbuster first volume, Not Your Mother's Slow Cooker Cookbook. Her other books include highly-acclaimed titles such as The Bread Lover's Bread Machine Cookbook, The Ultimate Rice Cooker Cookbook, NYM Microwave Cookbook, and NYM Weeknight Cooking.     Great Book

    I just bought this book yesterday. I just started baking with a bread machine and was having issues with the quality of the finished product. After getting recipes from online sites I decided to invest in a bread machine cookbook. I can't say enough about this book. I'm a huge collector of cookbooks and this one may be my favorite so far in a 100+ book library. I sat down with the book intending to just give it a quick glance and wound up spending 3 hours "reading" this book! My bread machine bit the dust and I'm awaiting my new one so I haven't been able to put the recipes to the test yet. I have noticed one big difference in Beth's recipes, they all use vital wheat gluten. I hoping that this addition will solve my problem of dense, heavy loaves. The VWG should give the bread some rise and lightness. Can't wait to get started!

    Outstanding addition to any bread baker's library

    I am notoriously selective about the purchase of cookbooks in general, insisting that they actually offer an amount and depth of information that truly adds to my current bookshelf, recipe repetoire and knowledge base, with a majority of recipes that will be acceptable to my household of picky eaters and my own broad tastes, without an undue amount of overly overdone recipes. They must be practical. And I long ago discovered the pleasures of using a bread machine, whether merely to mix and knead or to completely make my bread, rolls, and so forth.

    This book scores a homerun on every count.

    For rank beginners, it offers a highly detailed recipe for the basic bread-baking strategies of the standard white bread, whole wheat breads and breads using a starter of some sort. Then it goes on to offer a wealth of variations on each type. The ingredients are explained in the beginning section of the book. For someone who may be using an automatic bread machine for the first time, Beth Hensperger well explains the basics in language that is clear and well-organized. She even describes the important differences between machines, and how to work with each.

    She offers "sampler loaf" recipies - one pound loaves of breads that can serve as a daily loaf of fresh bread, or as a tester loaf for the wary baker.

    For an experienced bread machine baker, the book is organized in a way that makes it very easy to jump in and start baking. Recipe lists are clear. Recipe notes for each bread add additional information that are useful, frequently include suggestions for variations, and often entertain the reader. Recipes do not include ingredients that are difficult to find, and often include simple substitutions that truly bring the list into the capabilities of any neighborhood grocery store chain.

    There is a nice amount of white space in the layout for each recipe - where I like to note the date I first baked it, the general reaction to the loaf, and any options or variations I used when baking it. As an avid annotator of my cookbooks, I am pleased that even after this initial note, there remains enough space to accomodate any additional cursory notes I am likely to make in the coming years.

    The back third of the book is breads made using prized fresh produce or dairy products, sweet breads, quick breads and an outstanding section with simple toppings for breads. The book is completed with trouble-shooting sections, source information in the unlikely event that you are unable to find something - or more likely, are branching out to try, say, cherry honey in your Honey Bread recipe, and an excellent index. It even has a few recipes for what to do in the event you have leftover bread - something that is inconceivable to me.

    I am completely satisfied with my purchase of this book, as is my family. I look forward to continuing toward my goal to make every recipe in the book, becase there isn't a single one that won't be a hit at my house...well, maybe the one with olives in it...The Dutch Sugar Loaf was a huge hit. I really can't imagine anyone would go wrong with purchasing this book.

    The last Bread Machine Cookbook you'll ever need.

    Before I bought this book, my bread machine was collecting dust and taking up valuable counter space. Everything you need to know about this appliance is in Beth's book. Her recipes are wonderful. She has even taken the quesswork out of recipe conversions. Her chapter on Whole Grains is fabulous. Well done !

    Best Bread Machine Book Yet

    I have bought several bread machine cookbooks. This is the best one I have ever come across. It is the only book I use to make bread...I am giving all my other bread machine books away. This is a winner!

    Great book to have in your library

    I have enjoyed this book ad have used it on several occasions. I generall would perfer to make bread by hand, but then this book still allows you to that as well as bake in the bread machine. This is just one of the best bread books that I own and I own several.

    Nice book for a beginner

    Easy to follow recipes. Helpful tips, but no pictures. There is lots of information on breads, ingredients and bread machines, tips on what to do with leftovers and etc. didn't read a word.... but all the recipes i've tried this far resulted in nice and tasty bread

    Fantastic!

    I purchased this book, along with the Bread Bible by the same author, on the recommendation of a friend of mine who bakes a LOT of bread. I recently received a bread machine as a gift, and it has gotten a lot of use in the week that it's been in our house thus far! I found Ms. Hensperger's recipes and information very clear and easy to follow, and the naan I made from her recipe came out spot on for taste and texture! There are many recipes in the book that I can't wait to try out! I highly recommend this book to folks who have bread machines.

    Forget the rest -- buy this one!

    This book has it all ---- from how to choose a bread machine to best meet your needs, to recipe conversions, to troubleshooting. I love the diversity of the recipes - whole grains, sour doughs, etc, even ideas for using your leftover bread. In addition, it is attractive and in an easy to read format. I originally borrowed it from the library. After browsing through it I immediately went to my local B&N and bought it! P.S. My family especially loves the honey whole wheat recipe. After my mother-in-law tried the bread, she decided she needed a bread machine!

    Fantastic Resource for Bread Lovers!

    This book is so well researched and informative, and it's delivered in such a knowledgeable way. There is just about any bread imaginable, and for those with breadmakers with multiple capabilities (making chutneys, etc..) this book is a must have. I have a very basic bread machine and I find this book to be fabulous. All the breads I've made so far have been delicious, although I am partial to some of course! It's a great book to add to anyone's libraries of food-based resources. The illustrations are few, but the author makes up for it in easy-to-understand directions. I would highly recommend it.

    Great book, if only they hadn't taken one month to ship it!

    I love this book and it has many good recipes. But, I was very disappointed in the service I received from bn.com. They promised to ship the book for Christmas, but it didn't arrive until late January. When I contacted customer service I only got rude, unhelpful responses. I recommend this book, but I no longer shop at Barnes and Noble and will never shop there again due to poor service.

    The ONLY book you'll need

    The recipe selection is fantastic - everything I've made has turned out beautifully and tastes extremely good. I highly recommend this cookbook as absolutely essential to anyone with a bread machine!
