But since the former sparked a countertop revolution and interest in freshly made juices, it's only a matter of time until automatic bread bakers become the latest fashion. To his credit, former baker Burnett does understand diet and the benefits of high-fiber eating; he also includes a chart to transcribe his more than 100 recipes for the workings of other machines. Many of his edibles will be familiar: bagels, English muffins, and tea breads.

Italian Herb Bread

Elite
Variation for me 1 -pound loaf
3/4 cup (6 ounces) water
2 tablespoons extra-virgin olive oil
2 teaspoons honey
1/4 teaspoon liquid lecithin
2 cups (9 1/2 ounces) whole wheat flour
2 tablespoons powdered whey
1 1/2 tablespoons gluten flour
2 tablespoons dried minced onion
2 teaspoons dried chives (optional)
1 teaspoon fine sea salt
3/4 teaspoon garlic powder
3/4 teaspoon dried oregano
1/4 teaspoon dried basil, crushed
1 1/2 teaspoons active dry yeast


Put all the ingredients in the inner pan in the order listed, or in the reverse order if the manual for your machine specifies dry ingredients first and liquids last. Select Basic Wheat cycle, Light setting (or the equivalent setting for your machine, see chart, pages 42-44). Push Start.


Banana Walnut Bread

Transition
Makes me 1 1/2-pound loaf

The sweetness of bananas, high in potassium and so important to a healthful diet, combine with the richness of nuts in this ever popular bread.

3 3/4 cup (6 ounces) water
1 1/2 tablespoons walnut oil
1 1/2 tablespoons honey
1 teaspoon vanilla extract
2 teaspoons fresh lemon juice
1/2 cup (4 ounces) mashed ripe banana
2 1/2 cups (12 ounces) unbleached all-purpose flour
3/4 cup (3 1/2 ounces) whole wheat flour
2 tablespoons powdered milk
1 teaspoon fine sea salt
2 1/2 teaspoons active dry yeast
1/3 cup (11/2 ounces) chopped walnuts
1/3 cup (2 ounces) chopped dates

Put all the ingredients,except the walnuts and dates, in the inner pan in the order listed, or in the reverse order if the manual for your machine specifies dry ingredients first and liquids last. Select Fruit & Nut setting (or the equivalent setting for your machine, see chart, pages 42-44). Push Start.

Add the walnuts and dates, when the machine beeps, about 12 minutes after starting.
