I found "Canning & Preserving for Beginners" by Rockridge Press,” just a few months after suffering a power outage that lasted a week. I had just had my groceries delivered, so when the power went out, I lost everything. It was like taking $300 and throwing it in the wind. Reading through this magnificent book has taught me that despite my limitations in the kitchen, (and I do mean limitations), I can still drum up some tasty dishes, that will last through any storm and its aftermath that I might encounter.
In addition, it’s great fun to have the fundamentals of my dinners already created. All I have to do is open up a jar, and the best part of my meals simply needs to be warmed up. Don’t be afraid of canning, it is incredibly simple, and makes a lot of sense, and cents, too!

Being new to the idea of preserving food, this book was a fantastic source. It held my hand through what I needed, and WHY I needed it! My mother's garden produced not only more tomatoes than one household can consume, but also later in the season!  Preserving these tomatoes is a must, and canning helps a great deal. I look forward to canning more tomatoes, and wow-ing my visitors with all my freshly homemade salsa recipes!

Canning made fun? Yes! What an awesome family activity-- to grow your own stuff and preserve it, so that you know where it comes from and you know it’s healthy. I never thought I would be into something that seemed so “hippie,” but it really feels great knowing there are no strange chemicals in my food. I even have recipes to use all of my canned goods in. I really, reeeeallly love this book!

This is great primer for those who wish to learn about, and quickly set up station for, home canning to perverse a variety of foods – fruits, vegetables, soups, meats, etc.  Readers will learn about the two different basic methods to get started, equipment and materials to have ready, and an awareness of safety and taste issues that generally affect preserved foods.   Health conscience folks will love the bevy of low salt recipes, as well a large selection of recipes for many food types.  I cannot wait to share this resource with my little nieces.  -  Sue W

    Great resource for canning
This book simplified the world of canning for me. The detailed instructions make food prep a breeze. Easy to understand acidity charts help you pick between using a water bath canner or a pressure canner. If you’re interested in saving a little money and learning a healthy, enjoyable new hobby, this book will teach you how.

This book covers the concepts of water bath canning and pressure canning in depth. Better than the google search I tried when I was canning for the first time. Learn how to prepare jars, lids, and bands for canning. Lots of great recipes included, from pickles and jams to low sodium options to chicken soup and chili (I didn’t know you could can chicken soup).

    Great Book!
I really loved this book!  I have never done any canning before, and this book gave me so much wonderful information!  I did not even know there were different types of canning!  I have been super excited about the pickles...well, actually ALL the different pickled things I can make!  Being from New Orleans, I love pickled green beans in a Bloody Mary, but I cannot always find them away from home, and when I do- they are expensive! I was so excited to make my own...and they were delicious!!  I cannot wait to experiment with pickled okra!! Yum!

A simple, well-organized book on two kinds of canning, water bat

A simple, well-organized book on two kinds of canning, water bath and pressure cooker.  The authors emphasize safety throughout, and guidance on picking the most suitable foods. Roughly two-thirds of the book is recipes, from pickled peppers to easy-peasy grape jelly. An index would help, but that’s a small quibble for a comprehensive, easy to use guide.

“Canning & Preserving For Beginners” is a great guide for accomplishing a super fun project in the kitchen, especially if you already have an abundance of fresh ingredients just waiting to be put to use in a sustainable, cost-effective method. The only downside is that many of the recipes in the book are quite high in sugar and sodium so monitor your seasonings if you are on a diet. Also, more colorful photos to accompany the lovely collection of recipes would’ve added a little life to this guide. Especially useful would have been more photos of equipment and tools to top off each section.
