The author, a vegan chef, does exactly what needed to be done: He created multiple recipes for making your own hot sauces so you can move away from the vinegar-heavy commercial varieties. He also explores some fun kitchen chemistry. Be warned, his sauces are not for the faint-of-tongue. If you sweat from Tabasco, Texas Pete, or Frank's Red Hot, these recipes will make your cry.
I strongly recommend this cookbook!!!
