1 c. butter, softened
1 c. powdered low-calorie sugar blend for baking
2 t. vanilla extract
4 c. all-purpose flour
1 t. baking powder
½ t. salt
Optional: colored sugar
With an electric mixer on medium speed, beat butter until creamy. Gradually add sugar blend, beating well. Add eggs, one at a time, mixing well. Stir in vanilla. In a separate bowl, combine flour, baking powder and salt. Gradually add to butter mixture. Divide dough in half; pat each half into a circle and wrap with plastic wrap. Chill for one hour, until somewhat firm. Roll out 1/8-inch thick on a lightly floured surface, one-half of dough at a time. Cut out with cookie cutters; place on lightly greased baking sheets. Sprinkle lightly with colored sugar, if desired. Bake at 325 degrees for 8 to 10 minutes, until lightly golden around edges. Cool slightly on baking sheets; remove to wire racks to cool completely. Makes 2-½ dozen.

I got this cookbook on a special, so I was pleased to get it. Even more so when I saw that they had an interactive index in the front. This is a very thorough holiday Cookie cookbook with the additional surprise of many Candy recipes as well. There's 325 Pages on my Nook Tablet. Included are 36 Drop Cookies,...., with 32 Cut-Outs,...., plus 37 Bars,...., 36 categorized as Old Fashioned,......, 33 named Treats in a Twinkle,....., and 32 in the Chocolate Category. For some reason, the candy recipes are included in these sections. There are a few Fudge, Bark and Caramel recipes in this book. It even includes a recipe for Hot Cocoa, which I am sure is on the Hershey's can. We also get frostings. I did find some of the Hints very useful and good for wrapping up your holiday goodies. I know I'll use the one where you push a new Cookie Cutter into the cooling fudge and wrap it later as a full gift. There's also the hint to add a tablespoon of instant coffee to your cocoa to give it a richer taste. So I did find this cookbook worth five stars for the many varied recipes, some actually original, and the Holiday Hints.
