"What do you really want to do?"

Ah, the timeless question asked to the over 10 million of the workforce employed in the food service industry; waiters and waitresses in a transitional job to become something or someone else. Why? Because no one would want to be a waiter, right?

Matt Lehman does and Clam Chowder: A Server’s Field Manual is his "How-to" for anyone else along this career path. The book is a cleansing of the soul for those that have survived the front of the house and an eye-opening experience for those that have never donned an apron and said, "What can I get you to drink". The 6 main chapters cover which restaurants to work in, why wait tables in the first place, with whom you’ll be working, customers, what to do while you are at work, and the dungeon (the real life stories of debauchery the author has seen and done, too obnoxious to be real, but all are completely true).

Shifts of refilling sodas, complaining customers and being triple sat drains servers. With this in mind, Clam Chowder’s construction fits easily into aprons where it can be read "on the fly". What better way to kill time on a slow shift than pouring through relatable stories of the good, the bad and the overcooked? "Pick it up between tables, laugh and go back to the grind". The construction of the chapters allow the reader to begin wherever they choose, ideal when you have only 30 seconds before you must greet your new table. Throughout the book are ‘tips’ dubbed fast food boxes for those that just want the down and dirty. These tips offer simple but often forgotten principles like running your uniform through the dish machine to get that deep clean and how to successfully have sex in the walk-in freezer.
