    Claudia Bolles presents the complete list of Mexican recipes from Yucatan in a way that even I can understand. The dishes are delicious and specific to Yucatan. Listen to how she describes the Yucatecan Tamale: The Tamale from Yucatán is a red Masa filled with chicken and steamed in dark green banana leaves. In Yucatán, these are called Vaporcitos de Pollo and are eaten as a special meal on a night out. Because of the convenient banana leaf packaging, Tamales are ideal for road trips and picnics. Leftover Tamales are grilled on a hot iron griddle. The hot oil seeps through the banana leaves and stain the Tamale with a crispy fried flavor.
