Carmen Aboy Valldejuli expressed her hopes that, eventually, all readers may wend their way to Puerto Rico to sample these delicacies in the land of their origin. But, she was certain that the recipes in Puerto Rican Cookery would bring the flavor of the islands to your own table. Pelican also publishes the Spanish version of this book, Cocina Criolla, as well as the Spanish cookbook classic Juntos en la Cocina, written by Valldejuli and her husband, Luis F. Valldejuli. Valldejuli passed away in 2005.

    This Puerto Rican cookbook is a classic for a reason! It is the ONLY cookbook you will ever need!

    This remarkable cookbook is filled with hundreds of traditional Puerto Rican recipes that are easy to follow and are all delicious! I highly recommend it! The author is Puerto Rico's best kept secret. She also wrote the English version called Puerto Rican Cookery. Two gems from La Isla Del Encanto! Buen provecho.....

    My kitchen bible

    I was young when my mother passed away. I longed for the days when I would come home and have a home cooked meal of rice and beans and other Puerto Rican foods. I remember seeing this book in my aunt's house but it was in spanish. I did not understand much of it and could not figure out the measurements. On my very first trip to Puerto Rico as an adult, my husband took me the mall bookstore and there it was! In English! I love this book, I have been able to cook some of the best foods that I remember my mother cooking for me. From the fritters (almojabanas) to Lechon to a simple cup of white rice. It is the BEST!! It is my bible and I will not let anyone borrow this book. I have given this book as birthday presents to my American brothers and sisters in law,because they know the book will not leave my house. They absolutely love it. I have become quite the Puerto Rican cook!
