Meet the Author

Beverly Lynn Bennett has been working in restaurants for over 20 years, and as a chef in vegan restaurants since the early 1990s. She presently cooks at Sundance Natural Foods in Eugene, Oregon. She’s also a monthly columnist for VegNews, and she’s appeared at food festivals and on local PBS affiliates, preparing her own recipes. She is the author of Eat Your Veggies! Recipes from the Kitchen of the Vegan Chef.

Although I have not yet had time to cook most of the recipes, I have really learned a lot just from skimming this book. For example, one roadblock to gluten-free vegan eating is that many vegan dishes rely on seitan for protein. Seitan is unsuitable for gluten-free diets because it is made primarily from wheat gluten itself. Although I have been quite creative in accommodating the various food allergies and preferences in my family, I had never found a way around the seitan issue. This book contains recipes for both beef and chicken-style gluten-free seitan! In addition, the one bread recipe that I have had time to try since purchasing the book a few days ago came out great--moist and tender and quite easy to make. The style of the book is quite clear and concise and not at all intimidating. I will be using this book often in my future cooking endeavors.

This book was not what I expected. I was hoping for instructions and tips about being gluten-free vegan, and for more basic recipes. Many ingredients were obscure and not readily available in my area.

Really helped me learn how to put meals together easily. Great book to start cooking for this lifestyle. I keep this book in my kitchen! Enjoy!
