Meet the Author

Beverly Lynn Bennett has been working in restaurants for over 20 years, and as a chef in vegan restaurants since the early 1990s. She presently cooks at Sundance Natural Foods in Eugene, Oregon. She’s also a monthly columnist for VegNews, and she’s appeared at food festivals and on local PBS affiliates, preparing her own recipes. She is the author of Eat Your Veggies! Recipes from the Kitchen of the Vegan Chef.

I have colitis and wanted to learn how to eat without dairy and less meat. I have found this book easy and enjoyable to read. The recipes are easy to follow and great. The pumpkin bread is divine and so is the carrot ginger soup! You can really learn how to make healthy alternative choices without sacrificing the flavors and textures of foods you love.

I have been looking for this book for years!!! It explains the simple things I could not grasp with other books. Two or three others have borrowed this wonderful book and I am considering giving it out for gifts.

A good book for someone just being introduced to the subject. Helpful in learning nutrition and the importance of a proper diet, as well as sources for specific vitamins and minerals.
