...because this book is four weeks overdue! A friend turned me on to the Cooking Light magazine (thanks, Mowgli) and every dish I've tried has turned out fantastic. When I found the 2000 Recipe Book on the shelf in my local library, I snapped it right up and haven't taken it back in eight weeks. The recipes are very easy to follow and turn anyone into a low-fat cooking genius (my favorites are Jilted Eggs, Instant Black Bean Soup and Tuna Melts). The recipes are very 'middle-of-the-road', and you're always free to add as much -- or as little -- spice as you need. My fiance is thrilled that I've been able to cut so much fat out of our diets... maybe now we'll be able to fit into our 'weddin' clothes' come October. I can't wait to get my own copy so that I can mark 'Excellent' in the margins of my favorites.
