"Animals raised for food in the United States eat one-third of the world's total grain harvest." Facts such as this one and stories about animals rescued from slaughterhouses highlight this collection of vegan recipes compiled by an organization noted for its activism in the area of animal rights. The introductory material presents all the reasons for eliminating animal products from the diet, including health and environmental concerns and provision of food for all the world's population, as well as ethical concerns about the treatment of animals used by humans for food. But the main focus is the recipes, with close to 200 recipes in 11 categories. The pages are nicely laid out, and the recipes, all of which contain nutritional information, are easy to follow. This is an excellent collection for people who want to decrease or eliminate animal products in their diets but who don't know what to do with tofu, seitan, tempeh, nutritional yeast, and other ingredients familiar to vegetarians.
