Not only are the recipes wondergul tasting, America's Test Kitchen/Cook's Illustrated does a fantastic job of explaining how they got the recipes just right - which is perfect for someone like me who always wants to know "why." Why use a certain brand or ingredient, why do one step before another, etc. The chefs/writers are also excellent at explaining the science and methods of what they do, so once you master their version you can try tweaking the recipes.
