Chicken and Mango Tango
Tangy, Warm Chicken and Mango Salad

Got a hunger pang-o? Then taste the Tango! Chicken and sweet peppers dance with chunks of fresh mango in a spicy dressing.

Dressing
1/3 cup low-fat vanilla-flavored yogurt
1-1/2 tbsp each lime juice and mango chutney
1 tbsp seasoned rice vinegar
1 tsp honey
1/4 tsp each ground cumin, ground coriander, and paprika

1 tsp olive oil
4 boneless, skinless chicken breast halves, cut into strips or cubes
2 tsp grated gingerroot
1 clove garlic, minced
1-1/2 cups peeled, sliced mangoes
1 cup sliced red bell pepper
1/3 cup chopped green onions
8 cups torn romaine or mixed lettuces

Combine all dressing ingredients in a small bowl. Set aside until ready to use.

Heat the olive oil in a large skillet or wok. Add chicken, gingerroot, and garlic. Cook and stir over medium-high heat until chicken is no longer pink. Add mangoes, bell peppers, and green onions. Cook for 3 more minutes, until peppers begin to soften and mangoes are heated through. Stir in dressing. Remove from heat.

Divide lettuce among 4 serving plates. Spoon warm chicken and mango mixture over lettuce. Serve immediately.

Makes 4 servings.

Stir Crazy
Orange-Ginger Pork Stir-Fry with Broccoli and Peppers

Our insanely delicious pork and ginger stir-fry will make your taste buds go gaga! The flavor's so irresistible, it's sure to cause a stir.

1/2 cup low-fat chicken broth
1/4 cup hoisin sauce
1/4 cup orange marmalade
1 tbsp seasoned rice vinegar
1 tbsp cornstarch
1 tsp each sesame oil and grated gingerroot
1 clove garlic, minced
1/4 tsp Chinese five-spice powder
1 pound pork tenderloin
3 cups broccoli florets
1 cup each sliced red and yellow bell peppers
4 cups hot, cooked brown or white rice

In a medium bowl, whisk together chicken broth, hoisin sauce, marmalade, vinegar, cornstarch, sesame oil, gingerroot, garlic, and five-spice powder. Set aside.

Trim any visible fat from pork. Cut pork crosswise into 1/4-inch-thick slices.

Spray a large, non-stick wok or skillet with non-stick spray. Add pork. Cook and stir over high heat until no longer pink. Add broccoli and peppers. Reduce heat to medium-high. Cook for 3 more minutes. Add sauce and cook until bubbly and thickened. Serve pork and vegetables over hot, cooked rice.

Makes 4 servings.

Copabanana Cake
Banana Snack Cake with Chocolate Chips

Her name was Lola. She was a showgirl. But that was 30 years ago, when she used to have a show. Today she prefers to stay at home and bake scrumptious cakes like this one.

2 cups all-purpose flour
1 tsp each baking powder and baking soda
1/2 tsp salt
1 cup sugar
1/2 cup fat-free egg substitute, or 2 whole eggs
1/4 cup butter or margarine, softened
1 cup mashed, ripe bananas
1/2 cup low-fat sour cream
1 tsp vanilla
1/2 cup mini chocolate chips

Preheat oven to 350 degrees. Spray a 9 x 13-inch baking pan with nonstick spray and set aside.

In a medium bowl, combine flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, beat together sugar, egg substitute, and butter on medium speed of electric mixer. Add bananas, sour cream, and vanilla. Beat again until smooth.

Gradually add flour mixture to banana mixture, beating after each addition. Batter will be thick. Fold in chocolate chips.

Spoon batter into prepared pan and spread evenly using a spatula. Bake for 25 to 28 minutes, or until a toothpick inserted in center of cake comes out clean. Cool completely on a wire rack. Cut into 16 pieces and store in an airtight container.

Makes 16 servings.

Per serving: 185 calories, 5.1 g fat, 2.1 g saturated fat, 3.2 g protein, 32.2 g carbohydrate, 0.8 g fiber, 9 mg cholesterol, 183 mg sodium, % calories from fat: 25

    A Great Addition to a Low Fat Library

    I have a LOT of low fat cookbooks and I predict I'll be using this one frequently for weeknight dinners. Although I personally find the recipe names hard to remember, I remember the recipes. My own caveat would be to check the cooking times--I don't have a lot of time to devote to standing over a stove feeding ingredients into a pan. If I can toss it all in at once, or mix it up and stick it in the oven, an hour is OK. If it requires constant tending, it better not take more than 30 minutes. Some of these require constant attention for longer than 30 minutes. However, all the recipes I've tried have been very good, regardless of how long they took.

    Terrific cook book

    I bought this cook book off QVC, and this is truley the Best of all the low fat cook books that I have purchased......tastes like high fat not low fat cooking. Try it its worth the gamble!...Debbie Thomas

    Not Just a Cookbook

    This book (actually both of their cookbooks) are the best. The recipes are delicious even though they are low fat. The dishes are easy to prepare. The cookbooks are great reading. They are humorous--especially the names of the dishes and there are loads of interesting facts. One of my favorites and I have loooots of cookbooks!

    Crazy Fun and Great Taste!

    Being new to low-fat cooking, I searched B & N for recommeded buys and found Crazy Plates. My husband and I have not been disappointed in one single receipe! Besides awesome recipes, there are super tips and nutritional information. Best of all, the humor used throughout the cookbook brings relief when permanent life changes can be scary! Have fun and ENJOY!!!

    Best lowfat cookbook I've experienced

    This is far and away the best cookbook of it's type that I've ever used. No cardboard chicken here! I've made about 10 dishes from scones to pizza and have yet to be disappointed but I agree that calorie counts and carb counts can be a bit high so those of you on the Zone, like myself, might want to read the nutritional info carefully. Other than that, It's the best.

    Terrific Recipes! But watch the Calories!

    My mom and I bought copies of Crazy Plates and LooneySpoons to try. We both love them. The recipes are simple to prepare and most can be made quickly or with little planning. The Thai for Two and Satayday Night Fever are both really yummy (I made Thai 4 2 without the shrimp for a side dish as well), and I second the recomendation for Marlas Maple Pork. Already planning on giving them as gifts to friends for Birthdays and Christmas! One Caution - read the calorie count carefully - some dishes are low in fat, but pack a whopping calorie count per serving! A fun read too!

    Cooking Can Be Fun Again!

    There hasn't been one recipe from this book that my family hasn't liked. The names of recipes, comments, and cartoons found on each page have to make even the weariest of cooks smile. This book has brought about a sense of renewal in the kitchen through a healthful and innovative format. Thanks and hats off to the authors!!

    My husband didn't mind the low-fat!!

    I heard the authors on a radio talk show & was intrigued. Picked up cookbook and so far, so good. Husband loved Copabanana Cake, the To Stir with Love sauce was good and different (not too different). Tried something new in the Marla's Maple Pork -- never done tenderloin before! Tasty, tender and moist. The kids made the Marsha, Marsha, Marshmallow Squares -- yum! Enjoyed the creativity & fun the authors put into the book. Interesting without being too exotic.
