Smashed Tomato Caesar
6 large, ripe tomatoes, cut in chunks
6 romaine hearts, torn
3 cups croutons
1 1/2 cups grated parmigiano
salt and fresh cracked black pepper to taste
anchovy fillets, for garnish (optional)
6 lemon wedges, for garnish
Prepare caesar dressing and refrigerate until ready to use. In a salad bowl, smash tomatoe chunks with a fork, reserving all juice.
To serve, pour one cup caesar dressing into bowl with tomatoes, add torn romaine, croutons, one cup parmigiano, and toss. Adjust for salt and pepper. Garnish with anchovy fillets, lemon wedges, and remaing parmigiano.
