A Diagnosis and Decision
For months, Danielle suffered from drastic weight loss, joint pain and malnutrition. After countless doctor visits, she was diagnosed with a severe form of Ulcerative Colitis at age 22, just two months after getting married. Despite her expansive array of medications and prednisone steroids, Danielle found herself hospitalized numerous times each year, admitted repeatedly for multiple blood transfusions due to morbidly low hemoglobin levels.

Left with a choice between surgery or a life-long weekly treatment with harsh side effects, Danielle began her own research to explore other options. A friend’s success on the Specific Carbohydrate Diet (SCD) led Danielle to give it a try, only eating grain-free, sugar-free, starch-free, and unprocessed foods. Although no doctor would support a dietary change as a part of her treatment, Danielle realized that she could take things into her own hands to achieve real results.

Cooking by Necessity
Danielle noticed improvement, but committing to a new, drastically different diet was not easy. When her son was just 9 months old, she had an extreme setback which caused her to be hospitalized yet again and required multiple blood transfusions. She began eliminating more food groups including grains, lactose and legumes, following a plan that closely mimicked the Paleo diet. Seeing drastic progress after just 48 hours, Danielle began dedicating her free time to creating delicious comfort foods that could be enjoyed on a restricted diet. She focuses on flavors and textures, refusing to feel deprived despite her limited food choices.

Sharing her Success
Danielle started her blog, Against All Grain, to help others suffering from similar ailments continue to enjoy food. This is just what I was looking for! I have a host of paleo cookbooks that I love, but there are times you use part of a can of coconut milk or partial bunch of herbs or other ingredients... Rather than let it go to waste, use them and purposely-made extra proteins in meals later in the week. I love the idea of making things ahead to lessen prep time in the kitchen during the week and simplify my cooking. I rarely eat out these days and I enjoy cooking, but faster is always better as long as there are great flavors involved. We made the Waldorf Salad on page 100 and the delicious Chocolate Cookies on page 208. The recipes are simple and some are put together so cleverly I have no idea how she figured out to put some of these foods together into a recipe. I can't wait to try more and encourage anyone who is on a restricted diet (or not) to try this book. Also, do you know the difference between baking soda and baking powder? Or how long raw eggs will last in your refrigerator? What is “resting time?” What is the proper temperature to cook chicken? Then, I recommend that you buy a copy of “Conquer Your Kitchen” from Chef Jai Scovers. In “Conquer Your Kitchen,” Chef Jai Scovers will show you how to eat healthier and still provide wholesome meals that your entire family will love. Best of all, it is on sale right now here on BN.

I was really excited to get this book, because I loved Danielle's first cookbook.  I tried almost everything in her first book, and I've tried several things from this book:BBQ chicken, biscuits, buffalo chicken, meatballs, chipotle barbacoa (one of my favorite recipes of all time, and super simple!), wraps, strawberry shortcake, and brownies. I can honestly say that this is one of the best cookbooks I've ever seen, and if you could see my cookbook collection, that is saying a lot!!  All of her recipes are gluten and dairy free, but you wouldn't know it by eating the food.  Everything I've made has turned out amazing.  The instructions are simple and easy to follow as well.  Every one includes tips on how to prepare ahead of time and how to freeze for later.  I really like the section in the back that has some basics like ketchup, barbecue sauce, mayonnaise, herb rubs, etc.  I never realized how easy it could be to whip up my own barbecue sauce!  I'll never by that stuff out of the bottle again!   This is the kind of food that you can keep in a regular rotation, take to potlucks, and serve to just about anyone.  I took the brownies to work, and they were devoured!  I didn't tell anyone they were gluten and dairy free until they were gone!  I highly highly recommend this book!!  You will not regret it!!

This book is empowering. Anyone starting on Paleo or SDC to help cure severe GI symptoms is likely to find the whole cook-and-shop merry-go-round exhausting, just at the time they are feeling their worst. This book makes it easy. The meals are simple to cook and the shopping lists for delicious, healing weekly meal plans make things so easy, and much cheaper than venturing into Whole Foods on your own. Even her roast chicken brought new flavor to my SCD standby, lining the roasting pan with butternut squash and carrots (I also add some scallions) halfway through cooking. Walker never disappoints.

Congrats, you are one click away from a life-changing step into the ultimate succulent healthy eating heaven! Whether you are new to Danielle Walker’s irresistibly delicious recipes or an Against All Grain vet who can whip out her legendary Indian-spiced Pork Roast with Cumin-Curry Carrots topped with the glorious Asian Pear Chutney that single-handedly changed my life last year, you will absolutely love her brand new recipe book: Meals Made simple! Superlatively flavorsome and ambrosial, yet even easier and faster to make! Yes, you and I have just won the foodie lottery! I have her Vegetable Biryani (p216) on the way but I got so excited by the entire book that I already did my grocery shopping to also make her tantalizing Mediterranean Braised Lamb (p176) with Roasted Squash and Beets in Tahini sauce (p234), as well as her scrumptious slow cooker Thai Beef Stew (p160). Oh and it is just the beginning of a serious cooking spree as I am already doing a double-take of longing at every recipe I flick through. Before long, I plan to tackle her Beef Stroganoff (p150), her Peruvian-style Chicken (p116), her Meyer Lemon Curd Cakes (p276), her Crab and Asparagus Linguine (p200) and so many more delectable paleo feasts. And to think that a year ago I had never heard of “paleo” or even used coconut oil, coconut aminos, or almond flour; and spiralizer certainly wasn’t in my vocabulary - actually “vegetables” wasn’t either! And as a French woman living in Texas you can imagine how weird it felt to cut all dairy (ah le fromage!) and grains (ma baguette!) from my usual diet, only to discover a whole new world of extraordinary eating! A year ago I was on diabetes and high cholesterol medicine, but after only three months of cooking Danielle’s food, my internist took me off all meds! Wow! Or as we say in French: waouh! As you can see, Danielle had already achieved an astounding tour de force with her first book by offering jaw-droppingly flavorful recipes presented in a format that made me follow recipes for the first time of my life, and cherish them as if they had been handed down to me by my very own great-grand mother. Against All Grain and the surprising healing that it brought had become that precious. Little did I know that the best was yet to come because now her latest offering, Meals Made Simple, is the gift that keeps on giving as it is filled with a treasure trove of easy-yet-extraordinary recipes and ideas that will keep you healthy all year around but it is also an ingenious goldmine of valuable information that will help you navigate the paleo lifestyle with ease and confidence. I don't know what more can be said about how awesome this book is other than to buy it. I'd also recommend that you buy Conquer Your Kitchen from Chef Jai Scovers. The food storage charts are worth their weight in gold, making this the one book every kitchen should have.

Since being diagnosed with Celiacs disease 2 months ago, I have been in a whirl wind of emotions, and frustration. I was sent a link to Danielle's site by a friend whom suffers from this disease as well. I read through her blogs, and website and new I just had to have this amazing book. I saw that she was doing a book signing and that it was a new release. So I ran to my nearest Barns and Noble to purchase the book,but to my surprise I had to special order this book because they did not have any left on the shelves. I was shocked that there were that many people that wanted this book, but was reassured knowing that it was such a great find. I could not wait to get it in the mail, they said 5 to 10 days, I was giddy with excitement of getting this book. I was finally going to get some great recipes to use. Then the book never showed up. WHAT WAS GOING ON! I received an email explaining that there was a delay in the shipping and that If I wanted to cancel my order I could. I was like "UM NO" this book was an answer to my prayers and now your telling me I might want to cancel, come on. So I called Barns and Noble and they informed me that there was a shortage from the supplier and that they would send it out as soon as possible. I was relieved that they were able to get me my copy. So instead of taking a week or so it took almost 4. Besides the delay, I could not wait to sink my teeth into this recipe book, no pun intended. I finally received my copy and was in heaven. The style of writing is easy to understand, there are step by step instructions for pantry purchases, grocery lists, and advise all through out this book, and the pictures are just amazing. I love a cook book with tons of colorful photos so you can see what your making. The peruvian chicken is to DIE FOR, we had to make a few substitutions because of other food allergies, but to die for. The chicken wraps amazing, and the chicken stock heavenly. Thank you so much for such a profoundly life altering book.

Top of the line cookbook. Recipes are well explained with added bonus tidbits. Many different ways to find recipes in book and outlines additional information for those who have additional dietary restrictions.

I love this book!! My mother and I just went grain free and Danielle has been a true God send!! The absolute best recipee is the Beef Tacos!! You can't get better then those.
