I absolutely love this book! The dishes are a revelation for someone who is trying to lose weight in a healthy way, and keep blood glucose levels below the threshhold for diabetes. I have bought copies for gifts, and am buying more today, plus one to work from so I don't ruin my autographed book. Robin Ellis presents simple, fresh, Mediterranean-style cuisine tweaked to satisfy the taste buds and health requirements of his fellow Type II diabetics in a way that is enjoyed by everyone. He tells his own story, and encourages his readers to enjoy cooking with his personable light commentary on each dish. I got so inspired, I not only cook from this book daily, but blog about it as well. Not just 5 stars, but 5 forks as well!
