In helping one family member to manage diabetes while still being able to attend and enjoy meals can be overwhelming. With the Diabetic Cookbook for Two by Rockridge Press it has helped change the way we are able to eat healthy and still enjoy delicious and nutritional meals together. The recipes I have tried so far are simple to prepare, easy on the budget and visually appealing as well as delicious. This book contains everything from salads and soups to main and side dishes as well as a chapter on vegetarian entrees. It offers extensive information on tips and techniques and gives simple step by step instruction on preparing and serving. Each recipe includes appropriate serving size and nutritional information. I recommend this book highly and feel it offers not only a healthy way to manage diabetes but a way for anyone to incorporate healthy eating in their daily meal planning. I received a Kindle edition of this book for free to evaluate. This review is of my honest and unbiased opinions based on my personal use of this cookbook.
