Susie Martinez, Vanda Howell, and Bonnie Garcia are the authors of the popular Don't Panic--Dinner's in the Freezer and Don't Panic--More Dinner's in the Freezer.
Susie Martinez is the elementary director of Southern Gables Church in Littleton, Colorado. She graduated from Taylor University with a degree in social work. The mother of two, Susie and her family live in Colorado.
Vanda Howell attended Colorado State University and now serves as the administrator for the performing arts ministry at her church and sings on the praise team. A real estate appraiser, Vanda and her family live in Colorado.
Bonnie Garcia is a graduate of Grace College. A pediatric nurse, she is also the busy mother of three sons. Bonnie and her family live in Colorado.

I love the way this cookbook is set up - some great sections with yummy recipes.

I have sampled a couple of the recipes so far and I have liked what I have tried but I am just getting started. I am purchasing a grill soon and can't wait to dive into the Grate Grills and Marinades section - it all looks divine! Doesn't Cajun Mahi-Mahi, Chipotle Peanut Barbeque Chicken, Steakhouse Burritos and Tahitian Chicken just to to name a few - hello yumminess! The Crockpot Collection will also be a new favorite for me because Crockpot cooking fits well into my lifestyle so new ideas are always welcome.
I actually tried the Scrumptious Baked French Toast and loved the fact that it was designed to make it the night before and then you bake it when you wake up in the morning. I however was not prepared for how much it was going to raise while it was baking... it did actually cause the topping to spill over and create quite a lot of smoke in the baking process. I will now have to clean my oven but it was worth it. My kids loved it and I will be trying this one again!
I also made the Cheesy Potato Casserole and was thrilled with it! Super simple with only 4 ingredients and it was fabulous! I made a couple adjustments just because I kind of had to - first I bought 2 cans of cream of celery soup like I was supposed to but when I was ready to make it my almost 2 year old had "misplaced" one of the cans... so I substituted a can of cheese soup for one of them. Then I decided I wanted to use it as a main dish instead of a side dish so I added diced ham to it for some protein - fantastic! I was in heaven. This will be a new staple in my house!
The only negative I found in this cookbook in any way shape or form is that there is not a single picture inside the cookbook - the only picture at all is on the cover and it doesn't even tell us what recipe that is (although it looks really good though). As someone that shops by picture when I go to a restaurant (like most of society) I was disappointed that they wouldn't spend a little extra on the cookbook and put pictures in it. I thought that was shortsighted when every other part of the cookbook was fabulous.
All in all I will still get a ton of wonderful recipes from this cookbook, but pictures would have made it 5 star.

Cookbooks are one of my downfalls. I read them like a regular book and devour each page. So when the offer to review Don't Panic came across my mail, I jumped at the chance. This cookbook includes appetizers, main dishes, desserts and so much more. The recipes are down to earth and require no out-of-the-ordinary ingredients. The recipe I chose to do was Ruth's Hot Fudge Sauce. With ice cream calling in the freezer to be eaten, I know this recipe was the one for our family. I halved the recipe, and afterwards, was so glad I did. The halved recipe made about two cups worth of fudge sauce (which is plenty for our little family). It took approximately 20 minutes (and will depend on how long your element heats up if you have an electric stove) and was super easy. I got the nods of approval from the two youngest taste testers of the family, so this is a hit in our house.
Here's the recipe if you have 20 minutes of spare time to whip it together. Your ice cream will thank you.
Ruth's Hot Fudge Sauce
1/2 cup butter
1 cup chocolate chips
1 - 14 oz. can evaporated milk
2 cups sugar 1 t. vanilla
Directions: In a medium saucepan, melt butter and chocolate chips over low heat. Add evaporated milk and sugar. Stir well and bring to a boil over medium heat. Continue boiling for 5 minutes, stirring constantly. Remove fudge sauce from heat. Add vanilla, stir, and serve.
Yields 12 servings
Prep time: 20 minutes
Total time: 20 minutes

When I was first asked to review this cookbook, I was a little unsure of how to go about it. I haven't done very many of these kinds of reviews and I wanted to make sure that I gave this cookbook, the best coverage I could. So, I decided to run it past the best cook I know... my mom! Together we looked over the cookbook just to see what kinds of recipes it offered, did they sound appetizing, were they balanced and nutritious and most of all, would my kids eat them? Let's face it, kids can be picky! It was important to me as a mother to find things in this cookbook that I thought my own family would like. I'm happy to report that there were several recipes that jumped out at me right away. My girls would like that or dad sure would enjoy this...
I liked the fact that authors, Martinez, Howell and Garcia understood that it's important to have all the components of a good meal and some extras. This cookbook is divided into several sections, each offering recipes that are wholesome and delicious. Icons denote different features contained in each recipe including, lighter fare, recipes that can be used for entertaining, 6 ingredient meals, recipes that quick, and freezer friendly recipes. I thought that was very beneficial as I was looking through the recipes. This would give me a starting point as I was considering what to fix for dinner.
My mom and I choose a few recipes to try out from the cookbook, so that we could test the flavors, the possible options, like crockpot or freezer ready and how good our family liked the results.
I was looking for a simple appetizer that I might give the kids as snack after school to tide them over until dinner time, when I found this recipe in the Don't Panic! Quick, Easy, and Delicious Meals for Your Family cookbook:
SAVORY BAKED POTATO BITES
The recipe turned out great! These tasty little potato bites are certainly going to be a hit around our house. This is just an example of the great recipes in this book. My mom fixed a couple of other things from the cookbook that were instant pleasers at her house too, including the Tuscan Chicken, which uses penne pasta and chopped asparagus as two of it's main ingredients and Fruit Pizza which has a couple of variations for those who really love chocolate and those who are more of a sugar cookie fan. Everything we tried was tasty and went over well with the family. There are recipes for everything from grilling to the crockpot. This is a great cookbook for families on the go that don't want to let their health and nutrition suffer!
I highly recommend it and plan to use it often in my own kitchen!

This cookbook is great for those new to cooking. It gives helpful tips right from the get-to, with everything from organizing shopping trips to getting warehouse discounts to purchasing sale items to stocking up on cooking "staples." Additionally, for those visual learners out there, there are pictures throughout the book that correlate to different types of meals. The book has recipes for small appetizers, regular meals, desserts, and more. What I like is that it differentiates between foods that need to be baked versus grilled. There is even a pasta and crock-pot section, which mixes things up. There are little to no diagrams of the actual food, and the book is in black and white. However, this is good because, once you're done cooking, you don't feel bad for not making your food look as nice as some cookbook's...because there is no photo! Also worth noting is that the book discusses nutritional information of each meal, which most cookbooks overlook. Most amusing is the little catchphrase beneath each title / meal. These meals are so easy they barely take up one to two pages apiece. One recipe I particularly like is the apricot glazed salmon. While there were a lot of ingredients, the steps were very easy and only took 45 minutes to make. This is a great cookbook.Was this review helpful? Yes NoThank you for your feedback. I like the way this cookbook is organized. Recipes are grouped by categories which are then placed in order of when they might be used. For instance, first listed are appetizers, then breakfast, soups and salads, pasta entrees, crockpot meals, oven dishes, grills, skillets, and desserts. In addition, the recipes are labeled for lighter fare, quick, entertaining, six ingredients or less, and the three authors have even awarded little "blue" ribbons to their favorites. Nutritional information is given for each recipe. Indexes for measurements, equivalents, weights, and servings are found in the back of the book, along with a metric conversion guide.
My favorite organizational tool is x3, ingredients are increased so that extra meals can be made at the same time to be frozen for later. What a time-saver!
I tried Potato Soup Extraordinaire, and I shot this picture. It was delicious--so thick and creamy! I added the optional chicken, but next time I would leave it out. The soup really doesn't need chicken.

It is filled with easy recipes that are suitable for week night dinners or for entertaining guests. It’s written for busy families where whomever is cooking is out more than they are in. What I love about it is that there are more than just a handful of recipes that I’d make, both straight up and altered, enough that this book is staying with me. I recommend this Don’t Panic cookbook for anyone that is looking for a new one to try. I think that it will save you some time in the kitchen, let you sit down with your family to a homemade dinner even during a busy week, and help you with ideas for entertaining.Was this review helpful?
