The original English-language soundtracks for both films appear in Dolby Digital 5.1. Desperado adds a dubbed French track in Dolby Digital 5.1, and Spanish and Portuguese versions in Dolby Digital Surround, while Once Upon a Time only includes an alternate French track in Dolby Digital Surround. Desperado features optional subtitles in English, Spanish, French, Portuguese, Mandarin, and Thai, while Once Upon a Time is subtitled in English and French only. Bonus features on the Desperado disc include a commentary track from director Rodriguez, a behind-the-scenes look at the production of the shoot-out sequence, filmographies for the cast and crew, the original theatrical trailer, a preview of Once Upon a Time in Mexico, and a trial version of Screenblast video editing software. Once Upon a Time in Mexico also features a commentary from Robert Rodriguez, in addition to a selection of deleted scenes, an extended chat with Rodriguez, several short documentaries on various aspects of the making of the film, and additional material that can be accessed on computers equipped with DVD-ROM drives.
