One of four in the "Easy Cookbook for Kids" series, this edition focuses on preparing easy vegetarian dishes from a variety of cuisines around the world. A brief introduction explains what a vegetarian meal is and gives examples of the foods necessary to maintain a balanced diet without including animal protein. The succeeding nine chapters define cooking techniques such as safety practices; cooking terms such as chopping, dicing, etc; photos of actual cooking utensils such as a muffin pan and a whisk; introduces the USDA MyPyramid as a guideline for nutrition; and provides a conversion chart for wet and dry ingredient measures. The remainder of the book features eleven vegetarian recipes from different cultures such as falafel from Israel, asparagus frittata from Italy, and spinach peanut stew from Mali and Mauritania. Each recipe explains a bit about the country of origin, lists the equipment and ingredients needed, provides step-by-step instructions for making the dish, and adds additional information using "Cook's Tips" and "Did You Know?" features. The recipes are simple enough for beginners with some adult assistance, which the book suggests. Color photos of the completed dishes (although not that appetizing), some ingredients and a map of each country are included. Some of the facts and figures used in describing the countries are in error. For instance, Moscow is described as being 9,000 square miles in area. Surely, they mean 900 or 1000 square miles. Gr 4–6—Books in this series feature 11 simple, well-chosen recipes apiece, each from a different country. Children can learn to make tzatziki (Greece), bánh mì (Vietnam), khichadi (India), or akwadu (Ghana). The pages are peppered with interesting facts about each country as well as information about key ingredients or techniques, e.g., readers will learn how yogurt and pickles are made. Besides the volume dedicated to vegetarian dishes, many recipes are meatless. Full-color stock photos of ingredients and tools will help guide the cooks, and each recipe features an image of the completed dish. Though there are more familiar choices for less adventurous eaters, even young chefs with well-traveled palates will find some surprises here.
