I am not a vegetarian, but I am also not a big meat lover, so this book worked perfectly for me. I love the soup section! I never thought about replacing meats with beans, but with this book you need to. I have also never been a big bean lover, but thought I would try it out. If you are trying out the clean style of eat for the first time, please don't expect it to taste like McDonalds, or any other fast food that you may be use to (no offense!) it took me awhile to get to use to eating clean, but now my body does not crave bad foods! I only crave my cleans foods now. Thank you :)

I love this cookbook! It is easy to follow, descriptive, and filled with beautiful color photos of the finished product. Recipes note at the top of the page the number of minutes both the prep and cook time will be in addition to complete nutritional information per serving at the bottom of the page. The pages are well laid out with adequate white space surrounding concise, correct directions.
I am a "Pescatarian" and the author clearly describes different types of vegetarians and she then includes a symbol atop each page showing what category the recipe reflects (such as the different types of vegetarians, as well as "kid-friendly", "gluten-free", "quick & easy", "vegan", etc) . There is a nice balance of simple recipes along with some more complex dishes. I really liked the final section which offers two different holiday menus; one vegan and the other vegetarian (with many vegan offerings).
In my family of 4, two of us are vegetarians, two are omnivores and we all try to eat a clean, healthy diet most of the time. I've made many of the recipes in this cookbook for my family and after eating, I always ask how much everyone in my family liked them so I can pencil in stars next to the item in the table of contents for future reference. Here are some of the 5-star recipes for my family: Caprese Quinoa Salad, Butternut & Bean Soup, Red Lentil Dal with Spinach, Lemon Orzo with Edamame, Orange Peppers & Cherry Tomatoes, Pineapple Carrot Bread, & Baked Apples with Pecan-Currant Streusel.
This was a cookbook well worth the money!
