This fine-tuned cookbook, by the Texas Heart Institute's surgeon-in-chief and nutrition consultant, features precise, healthful recipes that don't preclude beef and often depend on food substitutionsherbs and spices for salt, and yogurt for sour cream. While some of these Southwestern and international dishes reveal a savory blend of spices (Gulf of Mexico crab cakes) or of dissimilar flavors (tomato salad with red-onion marmalade), there is also a recipe for plain boiled potatoes. And St. Tropez chicken salad offers an artistic, simple way to recycle leftovers without using the oven. Medical terms, mere buzzwords in many books of this genre, are described here in painstaking but welcome detail, so that the various forms of fiber are discussed: cellulose, hemicellulose, pectin, etc. A short chapter extolls Cooley's pioneering work in artificial heart transplantation.
